Absolute Chili

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 pound ground turkey breast
  • 1 can diced tomatoes w/jalapenos
  • 1 can (10.5 ounces) garbanzo beans
  • 1 can (10.5 ounces) black beans
  • 1 can (10.5 ounces) kidney beans
  • 1 14oz can low-sodium chicken broth
  • 1/4 teaspoon cumin
  • 1/8 teaspoon cinnamon

Optional Ingredients

  • 1/4 teaspoon salt
  • Hot sauce to taste

Cooking Instructions

  1. Heat oil on medium-low.
  2. Add onion and saute until soft (about 3 to 5 minutes).
  3. Add turkey and brown (about 5 minutes).
  4. Add tomatoes with juice, beans (all types), broth and spices.
  5. Stir and bring to a boil, then reduce heat and simmer 20 minutes.

I also used to scoop this into 1 cup servings into a 1 cup rubbermaid sealed container and line them up in the freezer. Then I’d grab them before I went to work and they would thaw in the fridge till lunch. It lasts forever too.

    I simply love chili because it is so yummy and comforting. This recipe sounds perfect. I really have to try it.
